My name is Erika and I’m passionate about animal welfare. After going vegetarian in 7th grade, I spent many years wanting to cut out all animal products but seeing it as too difficult of a task. To be honest, I never loved trying new foods! But I finally made the change in October of 2020 (yes, during the COVID-19 pandemic) and I’m very happy that I did!
As a new vegan and a college student, it was scary for me to spend money on new foods not knowing if I would like them. I hate creating food waste but, between the ADHD and the busy schedule, those fresh veggies in my fridge tend to become not so fresh in the blink of an eye. Rather than try to force myself to become something I’m not, I changed the way I think about cooking and eating. I don’t want to spend more energy than necessary on feeding myself, it’s difficult enough as it is!
So, because I know there are people out there who want to eat vegan food but also don’t want to spend much bandwidth on the change, these are the recipes that I’ve found to be quick, easy, and appealing to a wide range of eaters.
